Health :: Crockpot Love

Cooking. Something that one has to do, but I find it so time consuming. Enter the Crockpot.

My in-laws got me a crockpot about a year ago, and now that we’ve moved I’m finally getting around to using it. This is the absolute easiest thing to use in the world. I’m hitting myself for not using it earlier!! I’m definitely all for one-pot meals, and this combines one-pot with starting in the morning and forgetting about it!

I’ve done a couple recipes, all from Pinterest. If you follow me there, you’ll see that I’ve started pinning a ridiculous amount of Crockpot /Slow Cooker meals.

Sometimes, I’m brave and just try things for the sake of trying them. Like the Coca-Cola BBQ ribs. From scratch. No need for a BBQ. And they turned out amazingly, and got rave reviews (from Andrew’s friends). Woo hoo!

I love the range of things that it can make – soups, chickens, roasts, dips, desserts, drinks! You name it, you can probably make it. My goal is to try and use it at least once a week, if not more. The joy about this is that I’m also scratching an item off my 101 in 1001 list! (Make 10 Pinterest Recipes).

Here’s a list of Crockpot recipes I’ve used so far:

  1. Coca-Cola BBQ Ribs – This is the easiest way to make fall-off-the-bone ribs from scratch. Just do it. 4 ingredients and 8-10 hours in a crockpot. No regrets.
  2. Sticky Chicken Drumsticks – These were amazing. I’ve been eating them with rice and veggies for lunches for about a week (I made a lot of drumsticks…). MM the sauce is so good and smells delicious!!! Must try for drumsticks. Would probably be really good on any kind of chicken (with a bone) though.
  3. Minestrone Soup – So easy to make, although my crockpot is a little small for the quantities. I did have to move it to a bigger pot when it came time to add in pasta and actually eat it.
  4. Coconut Chicken Curry – Delish! Makes your house smell like something good is cooking too, which I quite enjoy coming home too!
  5. Grecian Roast Chicken – Honestly, not our faves. We preferred a less lemony kind of chicken. Maybe I did something wrong but it tasted to much like “soap” for our liking!
