This was an interesting one to create. The original recipe called for cranberries, but I wanted pure orange. I’m really addicted to the ones they have at Panera Bread, and wanted to replicate them. So far… not really close. The recipe only calls for a tablespoon of orange zest, and I feel like it needs more. So next time, I’m going to at least double it, and this time hopefully leave my thumb intact.
Although, I will say that once I took the chunk out of my thumb my mind wasn’t all there….
The first batch I put in were a right off because I forgot the eggwash and sprinkling of sugar.
The second batch I ran out of parchment paper so doubled them up… they worked but they didn’t attached to each other like I thought they would. Good to know for next time.
The third batch was probably the best, but a little to toasty on the bottom for me. It’s so tough because I put them in for like 10 minutes less than the recipe called for. But that must just be my oven.
I didn’t put the icing over top because silly me drank the rest of the orange juice… Maybe that would have made a difference? Who knows. They’re still delicious with jam! I’m looking forward to trying them again.
My only *ugh* about this recipe was that the dough was really, really sticky. I needed to add quite a bit of extra flour in order for it to actually knead properly. I might try a different recipe instead. I had good luck with one of Nigella Lawson’s, if memory serves. *hmm*
