A Foody Weekend

Wow. I was a busy bee this weekend. Andrew was up at the cottage [it was great weather since they actually got the snow that we were supposed to get… *phew*]. This weekend really revolved around food for me, chilling with my cat, watching movies and the Oscars, and not doing anything involving my homework.
Friday night, I went grocery shopping on the way home from work [definitely should have brought the bigger, sturdier bag for that one..], and picked up fresh ingredients for my cooking/baking extravaganza weekend. I was such a frugal shopper, and luckily majority of the things I needed were on sale. Avocadoes: 3 for $1? Amazing. Peppers: $1. I bought a lot of stuff, and it cost me way less than I thought it would. Even though it’s rather expensive for one meal… It lasted 3 days though. An upside! Once I got home, I broke out the food processor I got for Christmas, and whipped up a batch of yummy homemade salsa, and guacamole.

Mmmm I must admit, this is the best guac and salsa I think I’ve made yet. And the best part? I doctored both recipes from the original, so they’re almost like my own. Om nom nom. And I didn’t make as much as the recipe calls for, as I don’t eat it as fast as I should. But this is the first time that I finished all the guacamole, and almost all the salsa before it went bad. Rock on.

Saturday was spent almost all day in the kitchen, with a brief break for a movie… or two. In the morning, when I finally deigned to crawl my ass outta bed, I got up, ate a quick breakfast with tea and then hit the ovens..? Hah. I started baking cupcakes! Cherry Coke Float cupcake to be exact, and they turned out ah-may-zingly. Welcome back to baking, Jasmine. It was awesome. I love cherries, chocolate and whipped cream. In a cupcake? Total bliss. The only thing I’d change for next time, is make the well bigger so I can fit more cherries in the centre! Mmm so good. You can’t taste to Coke much, but it makes the cake quite light, and probably moist. Hah, but what do I know?

Mm. Topped all off with whipped cream frosting and a maraschino cherry. Delish. The only thing was in the recipe it calls for a Coca-cola glaze, which I made, but didn’t end up using. I don’t know what it is about me and making glazes, but I have some technical difficulties. They’re definitely not something I can just be like “Oh, let’s whip up a glaze today”. And recipes never work for me. I did the exact thing, and it just didn’t thicken. So I did a couple, had the glaze wreak havoc on my cupcakes, wrappers and countertop, before calling it a day. Besides the fact that the glaze makes the cupcake way sweeter, it wasn’t really needed. It’s a delicious cupcake on its own.

Saturday night I told my mom that I was going to take care of dinner. I had read from another blog about Taco Pizza, and was determined to try it. How can you not? Meat, cheese, veggie toppings, bread and nacho sides. Delish. Plus you eat it with your hands. Definitely easier to eat and make than nachos. I used the guacamole and salsa that I made the night before, and sour cream as my sides. My brother is particular, so just cheese on his. On the awesome one for mom and I, we had onions, green peppers and cheese. So, so delicious. So easy to make, it’s definitely found a spot in my recipe book!

And because I spent the rest of the weekend chilling in my room watching movies [Meet Me In St. Louis, Devil Wears Prada, Sex and the City], here’s a parting picture of my cat… monopolizing my computer.
